Cranberry Fruit-Nut Muffins

As a little girl, I can remember my grandmother, Mary Ellen Getty, making these cranberry muffins. She made all sorts of wonderful cookies, muffins and breads, but some how these are what remind me of her. They are so easy to make, I thought I would share the recipe. In this picture I used a pan that made them more like little cakes, but its still the same yummy results.

Cranberry Fruit-Nut Muffins

2 cups flour
1 cup sugar
1 1/2 teaspoon baking powder
1/2 teaspoon soda
1 teaspoon salt
1/4 cup shortening
3/4 cup orange juice
1 Tablespoon grated orange rind
1 egg, well beaten
1/2 cup chopped nuts
2 cups fresh cranberries, chopped
Sift together flour, sugar, baking powder, soda and salt. Cut in shortening until mixture resembles coarse cornmeal. Combine juice and grated rind with well-beaten egg. Pour all at one into dry ingredients, mixing just enough to dampen. Fold in nuts and cranberries. Spoon into paper lined muffin tins and bake at 350o approximately 20 minutes. Makes 18 muffins
